Color data without color content
A scanner records three color channels even when the page is monochrome text. Grayscale keeps one — the document looks identical (it was never really colorful) while the image data shrinks toward a third.
When to keep color
Keep color where it carries meaning: stamps and seals whose color matters for verification, highlighted passages, charts distinguished by hue, photo IDs. Grayscale is for the 90% of documents where it does not.
